Chef Alejandro Savaria and his award-winning kitchen team are serving up a modern Peruvian feast, showcasing the diversity of Peruvian cuisine, inspired by the art and culture of the coast, the Andean highlands and the Amazon jungle. Pastuso will be transformed with contemporary art, as well as glimpses into Peru’s past, setting the scene for our celebration of Peruvian culture. Join Chef Alejandro Savaria and his award-winning kitchen team for a delicious snapshot of Peru, through art, food, wine and Pisco.

Choros escabechados – Spring Bay mussels, escabeche sauce and pumpkin flat bread
Locro de zapallo – Roasted pumpkin crisp, burnt pumpkin puree and black garlic, crushed pumpkin seeds, huacatay oil

Trucha de rio – Goulburn River trout, dill, fennel, garlic drops, cucumber sauce
Pastel de choclo – Charred sweet corn, goats cheese, stir fry baby corn, asparagus, spring onion, alfafa
Main Cordero al palo – Andean style slow cooked milk fed lamb, salt bush leaves
